Ingredients
  

  • 1 cup whiskey preferably bourbon, chilled or frozen
  • 1/2 cup fresh lemon juice about 2 lemons, juiced
  • 1/4 cup simple syrup adjust sweetness to taste
  • 1 tsp lemon zest for bright flavor

Method
 

  1. Pour the whiskey into a shallow container and freeze for at least 4 hours or until solid.
  2. Juice the lemons using a citrus juicer to extract fresh lemon juice, then measure out half a cup.
  3. In a blender, combine the lemon juice, simple syrup, and lemon zest. Blend briefly until the mixture is smooth and well incorporated.
  4. Check that the frozen whiskey is firm and scoop it into the blender with the citrus mixture.
  5. Blend everything together until the mixture is slushy and slightly aerated, about 20-30 seconds.
  6. Scoop the icy cocktail into glasses, and garnish with a sprig of fresh mint or a lemon wedge if desired.

Notes

For a smoother texture, pulse in short bursts to avoid over-blending. Serve immediately for best icy crunch.
