Method
- Pour the whiskey into a shallow container and freeze for at least 4 hours or until solid.
- Juice the lemons using a citrus juicer to extract fresh lemon juice, then measure out half a cup.
- In a blender, combine the lemon juice, simple syrup, and lemon zest. Blend briefly until the mixture is smooth and well incorporated.
- Check that the frozen whiskey is firm and scoop it into the blender with the citrus mixture.
- Blend everything together until the mixture is slushy and slightly aerated, about 20-30 seconds.
- Scoop the icy cocktail into glasses, and garnish with a sprig of fresh mint or a lemon wedge if desired.
Notes
For a smoother texture, pulse in short bursts to avoid over-blending. Serve immediately for best icy crunch.
