Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 3 tbsp honey preferably thick and floral
  • 2 tbsp Dijon mustard grainy adds texture
  • 1 tbsp lemon juice freshly squeezed recommended
  • 1 tbsp olive oil extra virgin preferred
  • 2 cloves garlic minced
  • Salt and pepper to taste

Equipment

  • Large skillet
  • Meat thermometer
  • Whisk
  • Tongs

Method

  1. Start by patting the chicken breasts dry with paper towels, then season generously with salt and pepper on both sides. Set aside.
  2. In a small bowl, whisk together honey, Dijon mustard, lemon juice, and olive oil until smooth and glossy. Set the sauce aside.
  3. Heat a large skillet over medium heat until shimmering. Add a splash of olive oil, then carefully place the chicken breasts in the pan. Sear for about 5-6 minutes on each side, until golden brown and caramelized edges form.
  4. Use a meat thermometer to check the internal temperature; it should reach 165°F (75°C). If needed, lower the heat slightly and continue cooking until fully done.
  5. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, just as the garlic turns golden and releases its aroma.
  6. Pour the honey mustard sauce into the skillet, spooning it over the chicken. Turn the heat to low and let the sauce simmer gently for 2-3 minutes, allowing it to thicken and become glossy, coating the chicken beautifully.
  7. Remove the chicken from the skillet and let it rest for 3-5 minutes. This helps juices redistribute and keeps the meat tender.
  8. Serve the chicken slices topped with the sticky, vibrantly glazed sauce. Garnish with fresh herbs if desired, and enjoy the bright, caramelized flavors.

Notes

Adjust the sauce thickness by simmering longer for a more concentrated glaze. For extra flavor, add fresh herbs like thyme or rosemary while simmering.
