Ingredients

  • 1 ½ cups warm water around 37°C (98.6°F)
  • 1 packet active dry yeast about 2 ¼ teaspoons
  • 4 cups all-purpose flour or bread flour for chewier bites
  • 1 teaspoon salt
  • ¼ cup baking soda for boiling water
  • coarse sea salt for sprinkling flaky sea salt preferred
  • 1 egg egg beaten, for egg wash
  • 2 tablespoons melted butter for brushing after baking

Equipment

  • Large mixing bowl
  • Silicone spatula
  • Large pot
  • Baking sheet
  • Parchment paper
  • Pastry brush

Method

  1. In a large mixing bowl, combine warm water and yeast. Stir gently and let sit for about 5 minutes until foamy, which indicates the yeast is active.
  2. Add the flour and salt to the yeast mixture. Mix with a silicone spatula or knead by hand until the dough is smooth, elastic, and slightly sticky, about 8 minutes.
  3. Cover the bowl with a clean towel and let the dough rise in a warm spot until doubled in size, approximately 1 hour.
  4. Preheat your oven to 220°C (430°F). Line a baking sheet with parchment paper to prevent sticking.
  5. Once risen, punch down the dough gently and divide it into small pieces about the size of a walnut. Roll each piece into a ball with your hands.
  6. Bring a large pot of water to a boil and carefully add the baking soda. Once bubbling gently, prepare to boil the pretzel bites.
  7. Boil the dough balls in batches for about 30 seconds each. They will puff slightly and develop a shiny surface. Use a slotted spoon to transfer them to the prepared baking sheet.
  8. Brush the tops of the pretzels with beaten egg, then sprinkle generously with coarse sea salt for flavor and texture.
  9. Bake in the preheated oven for 12-15 minutes, or until the pretzels are golden brown and shiny. The aroma of baked pretzels will fill your kitchen.
  10. Once baked, remove the pretzel bites from the oven and immediately brush them with melted butter. Sprinkle with more salt if desired for extra flavor.
  11. Let the pretzel bites cool slightly before serving. They should be soft inside with a crisp, shiny exterior — perfect for snacking and sharing!
