Ingredients
  

  • 20 pieces cherry tomatoes preferably ripe and firm
  • 20 ounces mozzarella balls or pearls fresh, soft mozzarella
  • 20 pieces black olives pitted, for pupils

Method
 

  1. Prepare the ingredients by rinsing the cherry tomatoes under cold water and patting them dry. Slice each cherry tomato in half horizontally with a sharp knife on a cutting board, creating the base of the eyeball.
  2. For each eyeball, thread a cherry tomato half onto a toothpick or small skewer, with the cut side facing outward. Then, add a small mozzarella ball on top of the tomato half, pressing gently so it stays in place.
  3. Take a black olive and slice it very thin to create a tiny pupil. Place the olive slice on top of the mozzarella to resemble an eye's pupil, pressing lightly to secure it if needed. Repeat this process for all the skewers or toothpicks prepared.
  4. Arrange the completed eyeball bites on a serving platter. If desired, garnish with fresh basil leaves or herbs to add a touch of green and enhance the presentation.
  5. Serve immediately for the best freshness and visual impact, or refrigerate briefly until ready to display and enjoy. These spooky treats are perfect for Halloween parties or themed gatherings.
